Garlic Parmesan Grilled Chicken – Closet Cooking

Skewered grilled chicken crusted in butter, garlic, and parmesan with a hint of lemon!

Summer is the time for grilling and these grilled chicken skewers with butter, garlic, parmesan and lemon are one of my favourites! This recipe is as simple as seasoning some chicken (I like a cajun seasoning), skewering it up, and grilling it, basting it with the garlic, butter, parmesan, and lemon mixture, as it grilles. The parmesan with melt and stick to the chicken and garlicky butter will infuse it’s flavours everywhere! The chicken only takes a few minutes to cook and when it’s done you can enjoy it right off of the stick on on a plate with a full meal!

Garlic Parmesan Grilled Chicken

ingredients
    For the garlic parmesan sauce:
  • 4 tablespoons butter
  • 3 tablespoons parmigiano reggiano (parmesan cheese), grated
  • 4 cloves garlic, chopped
  • 1 pinch red pepper flakes (optional)
  • 1 tablespoon lemon juice
  • 1 tablespoon parsley, chopped
  • For the grilled chicken:
  • 1 pound boneless and skinless chicken breasts or thighs, cut into bite sized pieces
  • 1 teaspoon cajun seasoning (link)
directions
    For the garlic parmesan sauce:
  1. Melt the butter with the parmesan, garlic, and red pepper flakes, over medium-low heat, before turn off the heat and mixing in the lemon juice and parsley.
  2. For the grilled chicken:
  3. Season the chicken with the cajun seasoning, skewer it, and grill over medium-high heat, basting with the garlic parmesan mixture, until cooked through and lightly charred on both sides, about 2-4 minutes per side.

Option: Instead of cajun seasoning simply season with salt and pepper to taste.
Option: Instead of cajun seasoning use: 1 teaspoon paprika, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, 1/4 teaspoon pepper.
Option: Add hot sauce to taste to the garlic parmesan butter.
Option: Add a splash of worcestershire sauce to the garlic parmesan butter.
