This is without question our favorite breakfast of all time.
It’s healthy, savory, nourishing and completely delectable. In our opinion, a more complete breakfast would be hard to find. My husband, Preston, and I make this recipe almost every morning after our workouts. It fuels us right back up after being depleted from weight training and cardio, and gives us great energy for the rest of the day.
The highlight here are not the eggs, the guacamole or the sourdough (even though we absolutely love all of those). The big highlight is the sautéed broccoli. Yes, you heard that right. We are obsessed with broccoli for breakfast.
When cooked the way we cook it, it will become your new favorite. No question.
So let’s get right into it. Print the recipe below, get yourself these ingredients and go make some morning magic. Buen provecho!
Description
A complete and balanced breakfast to fuel and nourish your body. Sautéed broccoli, fried eggs and a side of toast, simple and good.
- Prepare guacamole by mashing the avocado along with the lemon juice and the salt in a small bowl. Set aside while you prepare the rest.
- Place a frying pan over medium-low heat and add olive oil; once hot, add in broccoli, garlic, lemon zest, cayenne pepper, thyme and salt. Use a spatula to help move the ingredients around and prevent broccoli from burning. Cook until broccoli is nice and soft, be careful not to burn/toast the garlic. If you see garlic browning and broccoli is not yet soft, reduce to low and cook on low until broccoli is ready. Remove from heat, and prepare toast and eggs.
- Toast your bread so it’s done by the time you’ve finished frying the eggs and ready to dish.
- Place a frying pan over medium heat and add olive oil. Once hot, add the eggs. Let them cook until the white is set and the corners begin to brown and curl, about 3 – 4 minutes.
- Divide avocado, broccoli, eggs and toasts into two plates. Enjoy right away.
